There's nothing quite like waking up to a hearty breakfast, whether you're out camping or enjoying a lazy weekend at home. This single-serve camp huevos rancheros is the perfect dish to start your day with a burst of flavor and it’s incredibly quick and easy to make.

Using the versatile AIO cast iron skillet (which works great on both the stove and an open fire), this recipe brings together crispy tortillas, perfectly fried eggs, and all your favorite toppings.

In just about 15 minutes, you can whip up a delicious serving of huevos rancheros, topped with fresh cilantro, creamy avocado slices, a squeeze of lime, and a drizzle of hot sauce. It's a breakfast that's sure to please, with minimal effort and maximum flavor.

How to Make
Huevos Rancheros

Servings: 1-2 | Prep Time: 5 min | Cook Time: 5-10 min | Total Time: ~15 min

Ingredients

  • 2 corn tortilla
  • 2 eggs
  • 2 tablespoons refried beans
  • Salsa of choice
  • Fresh cilantro, chopped
  • Avocado, sliced
  • Fresh lime juice
  • Cotija cheese, crumbled
  • Hot sauce
  • Cooking oil

Materials

  • All In One Cast Iron Skillet
  • Enamel Salad Plates
  • Copper Flatware
  • Wooden Spoon
  • Chef Knife

Instructions

  1. Start by heating a small amount of oil in a 6-inch All-In-One Cast Iron Skillet over medium heat. Add the corn tortilla to the skillet and toast it until slightly crisp, about 1-2 minutes per side.
  2. Next, use the skillet lid to fry the eggs. Add just enough oil to coat the lid, then crack the eggs onto it. Season the eggs with a pinch of salt and pepper as they cook.
  3. While the eggs are frying, spread a spoonful of refried beans onto the toasted tortilla. Once the eggs are cooked, place them on top of the refried beans and tortilla. Spoon your salsa of choice over the eggs.
  4. Cover the skillet with the lid and let the dish simmer on low heat for a few minutes to meld the flavors together.
  5. Remove the skillet from heat, then top the dish with chopped cilantro, avocado slices, a squeeze of fresh lime juice, crumbled cotija cheese, and a drizzle of hot sauce.
  6. Serve the huevos rancheros immediately, right in the skillet, for a rustic and convenient presentation.
