How to Make
Huevos Rancheros
Ingredients
- 2 corn tortilla
- 2 eggs
- 2 tablespoons refried beans
- Salsa of choice
- Fresh cilantro, chopped
- Avocado, sliced
- Fresh lime juice
- Cotija cheese, crumbled
- Hot sauce
- Cooking oil
Materials
- All In One Cast Iron Skillet
- Enamel Salad Plates
- Copper Flatware
- Wooden Spoon
- Chef Knife
Instructions
- Start by heating a small amount of oil in a 6-inch All-In-One Cast Iron Skillet over medium heat. Add the corn tortilla to the skillet and toast it until slightly crisp, about 1-2 minutes per side.
- Next, use the skillet lid to fry the eggs. Add just enough oil to coat the lid, then crack the eggs onto it. Season the eggs with a pinch of salt and pepper as they cook.
- While the eggs are frying, spread a spoonful of refried beans onto the toasted tortilla. Once the eggs are cooked, place them on top of the refried beans and tortilla. Spoon your salsa of choice over the eggs.
- Cover the skillet with the lid and let the dish simmer on low heat for a few minutes to meld the flavors together.
- Remove the skillet from heat, then top the dish with chopped cilantro, avocado slices, a squeeze of fresh lime juice, crumbled cotija cheese, and a drizzle of hot sauce.
- Serve the huevos rancheros immediately, right in the skillet, for a rustic and convenient presentation.
